Is it just me or does this time of year make you crave carrot cake?
I’ve been dreaming of it as I fall asleep at night which is usually an indicator that I need to post a recipe for it soon. But with warm weather right around the corner, I'm not really in the mood to test cake at the moment. Besides, wouldn't you rather have something with similar flavors that's light and energizing, like these carrot cake bites? :)
Ever since I made this Turmeric Carrot Cake Smoothie, I've been obsessed with the combination. Besides the awesome health benefits, the best part about these energy bites is how simple they are to make. I'm talking no food processor, just one bowl and a scooper. That's all there is to it.
The base is made from a combo of almond flour, rolled oats, cashew butter, and of course, shredded carrot. For mix-ins, I like to add shredded coconut and raisins but feel free to mix things up with whatever dried fruit or nuts you like!
- 1 cup almond flour
- 1/2 cup oats
- 1/2 cup cashew butter
- 1/2 cup shredded carrot
- 1/2 cup shredded unsweetened coconut
- 1/4 cup raisins
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt 1 scoop MegaFood® Daily Turmeric Nutrient Booster Powder™
- 3 to 4 tablespoons maple syrup
In a large bowl, combine all ingredients and stir until everything is incorporated and a dough forms. Taste test the dough and add more maple syrup, if preferred. Using a scooper, scoop out about 1 heaping tablespoon at a time and roll into balls. Store in a sealed container in the refrigerator for up to 4 days.
